Why make paneer at home?

Shop-bought paneer often contains preservatives and sits in storage for days. With this press, you control exactly what goes in — fresh milk, a squeeze of lemon or vinegar to curdle it, and nothing else. The result is softer, fresher paneer, made the same day you cook with it, in neat square blocks that cut into even cubes for curries, tikka, snacks and desserts.

Inside the box — every piece, in detail

1. The mould
Polished stainless steel square frame/container with an open, hollow interior. The holes are only on its side walls, so whey drains out evenly from the sides while the curd is pressed.
2. The inner plate
Completely flat square plate in a matte/satin finish, with rounded corners and a grid of round holes. No handle, no rim — it sits on the curd and lets whey drain through from below.
3. The inner lid
Solid polished stainless steel shallow tray with a raised rim and no holes at all. A D-ring handle in the centre, on a flower-shaped base, lets you lift and press it. It sits inside the mould, sunk below the mould's rim — it is not an outer cover that wraps over the top.

Important: the holes belong only to the mould's side walls and the flat inner plate. The lid is solid — that is what presses the curd evenly instead of letting it escape.

How to use it — step by step

  1. Curdle: Heat milk, add lemon juice or vinegar a little at a time until it curdles, then strain the curd through a clean cloth.
  2. Fill: Place the fresh curd into the square mould.
  3. Plate, then lid: Set the flat perforated plate on top of the curd, then place the solid inner lid inside the mould, on the plate.
  4. Press and drain: Let the whey drain through the holes in the mould walls and the plate. Press gently and leave it until the block firms up to the texture you like — softer for crumbling, longer for firm cubes.
  5. Unmould and cut: Lift the lid and plate, turn out the square block, and cut it into even cubes.

More than paneer: the same press works for tofu — press set soya curd the same way — and for draining sprouts and fresh curd.

Cleaning and care

Wash all three pieces before first use. After each use, rinse off curd and whey, wash with mild dish soap, and air dry before storing. No plastic, no coating, no springs to rust — food-grade stainless steel, made for daily kitchen use.
